Considering he spent the past 12 years at The French Laundry (the last 3+ years as Chef de Cuisine), represented America in the Bocuse d’Or (placing sixth in 2009, the best American placement to date), and won the James Beard Award for Rising Star Chef in 2010, there are few chefs as young as Timothy Hollingsworth with such a strong resume.

On the heels of Douglas Keane’s (Cyrus) dinner at The Strand House, Hollingsworth was the next guest of the monthly Culinary Masters Series. Having just recently moved to Los Angeles, Hollingsworth will act as a consulting chef on The Strand House and sister properties (The Zislis Group) while figuring out what his own concept will be.

Being a huge fan of The French Laundry, I was excited to be a part of Hollingsworth’s first post-TFL meal. I wasn’t the only one; the dinner sold out in just a few hours – we were lucky to be one of the first ones off the waiting list. The menu was five courses, inclusive of wine pairing by B Wise Vineyard, for $200. A brief look around the dining room clearly indicated that plenty of wine would be served this evening – a solid indicator of a good evening ahead.

For just over a year now, Manhattan Beach’s The Strand House has been doing a monthly dinner hosting notable chefs from across the country. The Culinary Masters Series presents a unique meal; local chefs prepare something different from what they’re serving at their restaurants and out-of-town chefs provide an opportunity to try their food without having to travel. Past chefs have included Walter Manzke, Michael Cimarusti and Josiah Citrin locally, as well as Jonathan Waxman and Jose Garces from the out-of-town category.

On this evening, Douglas Keane (of now-closed 2-Michelin star Cyrus in Healdsburg, CA) came to The Strand House. I’ve dined at Cyrus once before a long time ago (I think it was 2006) but don’t remember all that much from it. I was very excited to get a chance to sample more of Keane’s food. 5 courses were $100; wine pairings (Opus One, La Sirena, Seghesio, Byron) were an extra $50.

One cool aspect of this dinner was the fact that the winemakers (from each winery) showed up to discuss their wines and stories. Below, Michael Silacci of Opus One Vineyards.

Graham Elliot might be best-known for being a judge on MasterChef (alongside Gordon Ramsay and Joseph Bastianich), but he first made a name for himself in the kitchens of Chicago. He’s opened three restaurants in the city with his flagship being the eponymous Graham Elliot, which was awarded two Michelin stars in the latest guide. Elliot was in town to do some MasterChef tapings and decided to cook a two-night pop-up dinner, 5 courses for $100. Much cheaper than a flight to Chi-town. A wine pairing was available for $40 but we decided to go with the $30 cocktail pairing instead.

While it seems like downtown’s Mo-Chica is still a relatively new restaurant, chef Ricardo Zarate and Stephane Bombet (Picca, Mo-Chica) are about to unleash their newest concept Paiche in Marina Del Rey. Dubbed a Peruvian izakaya, the team is bringing Zarate’s Peruvian style closer to the water. I haven’t seen a menu of the new place, though a preview (and what appears to be a few old favorites and a bunch of new creations) is here.

In order to celebrate the grand opening (April 2), Paiche teamed up with Food GPS on a couple of one-night collaborative dinner events featuring a number of past Food & Wine Best New Chefs. The first dinner hosted Naomi Pomeroy of Beast in Portland (2009 Best New Chef) on a 5-course, $52 affair. The second night brought in Jamie Bissonnette of Coppa and Toro in Boston (2011 Best New Chef) and Viet Pham of Forage in Salt Lake City (2011 Best New Chef) on a 6-courser for $62.

this is not a pop-up, housed in Hollywood’s Square One Dining space, follows a similar concept to the now-defunct Test Kitchen, housing chefs for a short period of time to cook whatever they want. It’s a concept that I really liked then, and enjoy just as much now as it keeps things new and interesting. Evan Funke, of Rustic Canyon fame (and developed one of LA’s most notable burgers) stepped into the restaurant for one night to preview his menu for upcoming Bucato.

Bucato, developed in the old Beacon restaurant in the Helms Bakery complex (with Father’s Office and Lukshon), has faced a number of delays (first rumored to open in December). While working on the opening of his Italian restaurant and “pasta laboratorio,” Funke started up a food truck serving only one thing – porchetta sandwiches. I recently tried it and, while not exactly a traditional porchetta, it was delicious.

New for 2013, the team behind the ever-popular Animal began a series of dinners called “Cooking with Friends” in which a guest chef would join for one night and cook a collaborative dinner, with a portion of proceeds going to the chef’s choice. I’m always intrigued by meals like this as it provides an opportunity to try something unique, particularly if it’s an out-of-town chef.

For this first dinner, the guest chef was Christopher Kostow of the Michelin three-star The Restaurant at Meadowood in St. Helena, CA. My only visit to the restaurant was at the tail end of 2009, and was actually one of the meals that inspired this blog’s creation. Given Meadowood’s accolades and reputation for serving a highly-refined, super-seasonal/local type of dining, the restaurant was packed for the one-night dinner. I was very excited for this one.

The eight-course menu was priced at $135 and the beneficiary of this dinner was Cancer for College, a charity that provides college scholarships to cancer survivors.
