Yamakase has been on my radar since I first heard about it a couple of years ago. The restaurant is an invitation-only (request one here) “secret” Japanese spot serving high-end Japanese. The meal may be best described as kaiseki, but it’s not really; it’s moreso a progression of sushi/sashimi and small plates of whatever the chef wants to serve. The courses are definitely Japanese-centric but there are a handful with clear Western influences. As expected, the meal is omakase-only with around 20-25 courses; the price varies somewhere in the low $200s. It’s a BYOB only affair.

The chef here is Kiyoshiro Yamamoto (Yama-san) formerly of Santa Monica’s The Hump which closed amidst a ton of controversy. Yama-san is a one-man show and the ten-seat bar curves around the kitchen giving everyone a full view of the preparation of the meal from start to finish. For the food-enthused, it’s as much a show as a meal. On this evening, Yama-san began by expertly breaking down a huge bluefin tuna loin, proceeded to prepare two Japanese hairy crabs for the steamer, then grated fresh wasabi root and shaved some truffles. It promised to be an exciting meal even before the first bite.

Chef Shunji Nakao has been around the LA sushi scene for some time now (greater than two decades) being a key plater in some well-known past ventures (Matsuhisa, Asanebo, The Hump). His eponymous and short-lived Shunji’s on Melrose opened a couple of years ago, to be succeeded by this spot in West Los Angeles. Opened early last year, it’s been on my radar for some time but I didn’t make my first visit until this week for lunch.

The restaurant debuted Mon-Fri lunch service last month, offering a more affordable way to try the restaurant’s oft-praised sushi. Regular dinner service offers a la carte, as well as a handful of tasting options: a $50 sushi special (10 pieces + 1 hand roll), a market-priced sushi omakase, a $100 omakase centered around plated kaiseki-like preparations, and a full omakase starting at $140. On this afternoon, we opted for the premium lunch special which offered 12 nigiri and 1 hand roll for forty bucks…a relative deal. Currently, lunch is sushi-only with potential for the full kitchen to be available in the future.

I appreciated that the day’s offering was rather comprehensive, complete with prices. As with many sushi meals, I’ll save comments for the end.

Paiche opened this past Friday, the newest venture from the Mo-Chica/Picca team of Ricardo Zarate and Stephane Bombet. I’d been to Paiche the week before for the collaborative dinner with Naomi Pomeroy (of Beast in Portland), but this would be my first look at the restaurant in its true form. The restaurant opened up for a Friends & Family night to celebrate the grand opening and get a full night’s service under its belt.

Overall I would say the style of the food is very similar to Picca and Mo-Chica, but the izakaya approach presents a few differences. Portions are tapas-sized, sized to be able to share a lot of different flavors. The menu is, by far, the most vast I’ve seen from the team with over 50 items on the menu. The drink side of the menu is equally as large, with almost 20 cocktail options on the menu and dozens more in terms of wine/beer/spirits.
