Carbone has quickly become one of my favorite Italian restaurants in the country. While this Vegas outpost of Carbone has been around since 2015, my first time visiting the restaurant was in 2020. Now in 2022, this post reflects my third visit here.

Las Vegas was the second location of the restaurant; its flagship in New York opened in 2013 and has since spawned other locations in Miami, Dallas, and Hong Kong. The original NYC location held a Michelin star from 2014 all the way up until the current 2023 guide.

To begin the meal, welcome bites of pickled vegetables, salumi, Parmesan, and a basket of breads came with the menus.

The highlight of this meal, and my past ones, was the rigatoni and veal Parmesan. They are both simple dishes; I’m not sure how Carbone was able to have its versions stand out but they were superb. The rigatoni had an addictive chew with a very savory tomato sauce while the veal was executed with such finesse. Its breading was perfectly crunchy and smothered in just enough sauce and comforting cheese. Branzino was another highlight and my first time having it here. The fish was prepared just right with a slightly crisp skin and tender, moist flesh. The cooking at Carbone is at such a high level, I definitely hope to return soon.
